My mom used to make these after cutting watermelons when I was a kid. We call these "Pickles" but it's not like pickles. No sour, no salty.
Usually most people throw away the skin part, you can eat like this. It's juicy.
I'm so feeling good since I started the raw life in July. Still wondering how I manage that.

I've heard of watermelon pickles. I've never had them myself but think it's interesting!
Rosie, thank you again. I've tried that pickles with Canadian watermelon when I was living in Canada but the tase was a little bit different. I think Japanese watermelon is a little bit different from North american one.
